Instructions
- Boil potatoes until fork-tender, then mash until completely smooth.
- In a bowl, whisk eggs until slightly airy.
- Add Greek yogurt and mix well.
- Fold in mashed potatoes.
- Add salt, pepper, and baking powder. Mix into a thick, creamy batter.
- Lightly grease a baking tray or pan.
- Scoop or shape into small buns.
- Bake at 180°C for 20–25 minutes or cook in a covered pan on low heat, flipping gently until golden.
