For the Salad
- 1 small head iceberg lettuce, finely chopped
- 1 head romaine lettuce, finely chopped
- 4 oz pepperoni or keto-friendly salami (no added sugar)
- 1½ cups shredded mozzarella cheese
- ½ cup marinated artichoke hearts, drained
- ¼ cup sun-dried tomatoes (no sugar, low carb) — optional
- ½ avocado, diced (adds healthy fats)

- No chickpeas (high carb)
- No honey or sugar
🥣 Keto Vinaigrette (Sugar-Free)
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 2 tsp Dijon mustard
- 1 tsp zero-carb sweetener (Monk Fruit / Stevia / Erythritol)
- 2 tbsp Parmesan cheese, finely grated
- ½ tsp salt
- ½ tsp black pepper
👩🍳 Instructions
1. Make the Keto Dressing
Whisk olive oil, red wine vinegar, Dijon mustard, and sweetener.
Add salt, pepper, and Parmesan. Mix well. Set aside.
2. Prepare the Salad
In a large bowl combine:
- iceberg & romaine (finely chopped)
- salami/pepperoni strips
- mozzarella
- sun-dried tomatoes (optional)
- artichokes
- diced avocado
3. Toss & Serve
Pour the keto vinaigrette over the salad.
Toss thoroughly until every bite is coated.
Serve immediately with extra Parmesan and black pepper.
