This is the ultimate “lazy but healthy” dinner. It’s packed with protein, bursting with sweet and spicy flavors, and takes almost zero effort thanks to the air fryer.
Ingredients
- 1 lb Chicken thighs (boneless & skinless), cut into bite-sized cubes
- 12 oz Vegetables of your choice (zucchini and bell peppers work great!)
- 1/2 cup Onions, sliced
- 2 tbsp Honey
- 1/4 cup Soy sauce (or coconut aminos)
- 2 tsp Garlic, minced
- 1/2 tsp Red pepper flakes (adjust for heat)
Instructions
- Prep: Cut the chicken thighs into even cubes.
- Mix: In a large bowl (or directly in a lined air fryer basket), toss the chicken, vegetables, and onions with the honey, soy sauce, garlic, and red pepper flakes until everything is well-coated.
- Cook: Place the mixture in the air fryer. Cook at 400°F (200°C) for 10–15 minutes.
- Finish: Give it a shake halfway through to ensure even browning. Once the chicken is golden and cooked through, take it out and serve immediately!
Pro Tip: This recipe is incredibly versatile. You can swap the chicken for shrimp or tofu, and use whatever veggies are sitting in your fridge. It’s a foolproof formula for a delicious meal!
