Avocado & Spinach Egg Toast

Ingredients

2 slices whole grain bread (high-fiber, USA store-bought or bakery)

1 ripe avocado

2 large eggs (preferably free-range)

1 cup baby spinach, washed

1 tbsp olive oil (extra virgin)

1 tbsp lemon juice

¼ tsp sea salt

¼ tsp black pepper

Optional: chili flakes, cherry tomatoes, feta cheese

Instructions

1. Toast the Bread – Lightly toast your whole grain bread slices until golden.

2. Prepare the Avocado Spread – Mash the avocado in a bowl with lemon juice, salt, and pepper until creamy.

3. Sauté the Spinach – Heat olive oil in a small pan over medium heat. Add spinach and sauté for 1–2 minutes until just wilted.

4. Cook the Eggs – In the same pan, fry or poach the eggs to your preferred doneness.

5. Assemble – Spread mashed avocado on toast, layer with sautéed spinach, and top each slice with an egg.

6. Garnish – Sprinkle with chili flakes, add cherry tomato halves, or crumble feta on top if desired.
