Ingredients
- Protein: 2-3 large chicken breasts (boiled and shredded).
- The Sauce (Salsa Verde):
- 1 Poblano pepper (charred and peeled).
- 4-5 Jalapeños (boiled).
- 6-8 Tomatillos (boiled until color changes).
- 1/2 White onion.
- 2 Garlic cloves.
- Handful of Fresh cilantro.
- 1/2 cup Crema Mexicana (or sour cream).
- 1 tsp Chicken bouillon.
- 1/2 cup Water (adjust for consistency).
- The Rest:
- Low-carb corn tortillas (e.g., A La Madre brand).
- Shredded Monterey Jack or Mozzarella cheese.
- Cooking oil (High-oleic safflower or olive oil).
Instructions
- Prep the Chicken: Boil your chicken until tender, then shred it. (Pro-tip: A hand mixer or stand mixer makes shredding effortless!)
- Char the Poblano: Roast the poblano pepper over an open flame until the skin is charred. Place it in a plastic bag to “sweat” for 5 minutes, then scrape off the burnt skin and remove the seeds.
- Boil the Veggies: Boil jalapeños until they change color, then add tomatillos. Remove them as soon as they turn a dull green (don’t overcook, or they’ll get bitter!).
- Blend the Sauce: In a blender, combine the boiled jalapeños, tomatillos, charred poblano, onion, garlic, cilantro, crema, chicken bouillon, and water. Blend until smooth.
- Cook the Sauce: Heat a little oil in a pan, pour in the green sauce, and simmer until it thickens slightly. Set aside.
- Prep Tortillas: Lightly fry your low-carb tortillas in a pan with a little oil for a few seconds per side. This makes them pliable and prevents them from breaking.
- Assemble:
- Lay a tortilla flat, add a handful of cheese and shredded chicken.
- Roll them tightly and place them in a pan with a layer of sauce at the bottom.
- Final Simmer: Pour the remaining sauce over the rolls and top with a generous amount of cheese. Cover the pan and cook on low heat until the cheese is perfectly melted and gooey.
- Serve: Garnish with fresh cilantro and enjoy!
